That's a good question! The first time he dies is when he sort of comes to understanding the errors of his ways, having a veil lifted from his eyes revealing that he was nothing but a disposable puppet, and sacrifices himself to save protags. Then second time is when he's brought back Against His Consent (yes, he's actually upset about that) and fights this False-God that results to his death. Both of his deaths are in a way him rebelling against the corrupted authority and pursuing his own 'truth'.

Here in exp he's less angry but kinda getting tired of being brought back (he didn't consent to this!!) and 100 % distrustful of everything that's going on around here. While he doesn't necessarily think that the locals of Aldrip are secretly malicious or anything but he wonders just how sane in the mind they are? Can you really believe they have objective way of understanding the world? He's researching and waiting to see a proof of a powerful god-like authority of this world -- something he can try to destroy later on.

While he was still serving as a "regular" SOLDIER, did he have any feelings about the people & places he was sent off to repress?

Does he have any theories about how Exp works based on his research?

Not much but his reasons for that are fairly complicated!

Sephiroth was born to Shinra and raised by them. Originally they thought he was a hybrid Cetra who could lead them to an energy-rich "Promised Land" but when he never developed Cetra powers and DID develop numerous other ridiculous powers they started raising him as part of their military. Canonically Seph was a front line fighter before he was ten years old. He was not raised to question orders or think much about why he did things. This DID change later, when he had to fight Elfe, the leader of AVALANCHE. She asked him why he fought and he didn't have an answer and that troubled him. After this he ostensibly decided his reason for fighting was to protect his friends but, well, right after that Crisis Core happened and he lost his friends. Then he lost his mind in the Nibelheim Incident. In other words, he didn't think about who he fought or why until relatively late in his career, around the time the Wutai War was already wrapping up.
